“At Etch, as at Becasse we have a strong philosophy to sourcing the absolute best produce available, we go to extreme lengths to make this happen, often eliminating ‘middle men and suppliers’ to reduce unwanted over handling issues and additional costs. We make a solid commitment to only working with suppliers and growers that we trust and embrace the idealolgies of sustainable, organic or ethical farming practices, and who have the same commitment and passion as we do in producing and sourcing the absolute best”.


Flemington Markets
All our fruit and vegetable supplies are sourced through Flemington markets, we visit the markets daily to source the best possible local produce. We have a commitment to sourcing outstanding produce, this can only be achieved by selecting the produce ourselves, which not only guarantees quality and freshness but also provides us with a constant source of inspiration and the rare ability to be in direct contact with each of our growers.


Gundooee Grass Fed Organic Beef
Gundooee is the family property of Rob and Nita Lennon who farm the organic grass fed F2 wagyu, in a small town called Dunedoo which is 1 hour from Mudgee or about 5 hours north west of Sydney near the Great Dividing Range.

After meeting Rob in 2006 at a wagyu beef conference I was invited to Rob’s farm along with our chefs to understand the unique farming practices of the Lennon’s. We have since forged a wonderful relationship where the cattle is sourced direct from Rob’s farm to our production kitchen where the carcasses are jointed and turned into various products such as sausages, bressola, burgers, the prime cuts are dry aged for 6 weeks and feature on the menus at Becasse, Etch and Plan B.

The Lennon’s farm is rich in organic soils, predominantly volcanic basalt over much of the grazing country, carried over from a lava flow millions of years ago. The basalt soils are mostly quite heavy and high in nutrition and soil biology producing high feed quality (and quantity after a good fall of rain). 
Due to the synergy effect between the deep-rooted native perennials and the soil microbiology, the soils are better able to release minerals, which would otherwise be rendered unavailable.

The wagyu bull’s are crossed with Angus cattle and produces a less intensely marbled meat, which instead contains small speckles of intramuscular fat.

Our dry aging process ensures incredibly tender, full flavoured meat, which for a grass fed organic product is extremely rare to find in this country.

Salt Bush Lamb
Our saltbush lamb is sourced from Arcadia Farm in Narrandera in the Riverina region of NSW, managed by Graham Strong with his parents Garth and Jan.

The farm has been in the family for around a hundred years, and the present day business embraces biological farming techniques, large Old Man Saltbush (Atriplex nummularia) plantations, native pastures, and a vision for the future that has so far seen many thousands of local native trees planted on the property.

The family are also hosts in the Willing Workers On Organic Farms scheme (WWOOF) and regularly accomodate overseas agricultural students.

We take a great deal of pride in being able to offer free range saltbush lamb which has had a natural, stress-free life, and is produced with utmost care for animal welfare and the Australian environment.
Old Man Saltbush is a deep rooted perennial plant species, meaning it has the ability to draw on nutrient reserves deep in the soil that most other plants can't touch. Through the grazing animal these nutrients are cycled onto the soil surface for other plants to then use.
